Sending Mail By Priority With Postfix

I'm having issue with mails stuck in queue and take days to send out. I'm looking for a command or script solution that puts a priority to particular message or domain so their message can be sent first.
Mail mta is Postfix running on BSD system.

Somebody is sending spam from my postfix server.
How can I locate the domain causing the problem?

My postfix is sending huge amounts of e-mail that I was forced to stop postfix.
Even if I set relaying to closed, disable message submission and disable sendmail spam is still being send..
Outgoing mail control reports nothing at all, and if I check my server with online tools to be sure it is not relaying everything is reported fine.

we are in this situation:
OS: CentOS 6.5 (Final)
Plesk version: 12.0.18 Update #16, last updated at Sept 11, 2014 04:07 AM
PHP: 5.4.32
we created a new mailing list test1@domain.tld and we tried to send a message, as administrator, to the list and to the temporary users subscribed.But Mailman dones't send anything ! And we receive this error:

All other services on this server seems to be ok, normail email sending, receiving, http... all right... but mailman no.

This may well turn into a free-for-all but...
If you're hosting a large, MySQL website and priority one (more important than price) is database stability and server uptime... who would you recommend as the best host for your money ?
I have free-hosting with Awardspace and their customer service and uptime are great, but their database crashed a couple of times in just a few months. Granted they always fixed it quickly. I've never used their paid packages.
And also I have quite a few sites pay-hosted with a Trini company that's re-selling from myhostcenter.com . They have fair customer service, but their databases have never (in four years) crashed on me... I've never lost data... and the price is very right! What I dis-like is the lack of advanced warning when sites are going to be down for server-maintenance. And there have been a couple times when the server would be down for no apparent reason at all, and with no apology.
Those issues haven't been huge problems before, because the sites are all relatively low-traffic, but it can be a disastrous for a future project I'm working on. Therefore, who would you recommend as both the most stable and most reliable host that money can buy ?

write a script which will run a script on every incoming mail, the script must touch a file in /var/log/mail - filename must be a login on server... thats all
i found something to use procmail, but i dont know how to bite it
how to do that? would be nice if you drop some links or tutorials..
always i hate mail servers!

I can't send any mail from the server. I don't get any log information about errors. Postfix is installed on opensuse 13.1.

My issue started ince a couple of months seemed to increase with update to Plesk 12.0 (though I can't guarantee it).I am using Centos 6.5, all updated. What happens is that postfix usage starts to increase without any apparent reason (during week-ends for example). Then postfix is not responding anymore.
